This grilled nectarine salad is made with burrata, heirloom tomatoes, arugula, basil, and a homemade balsamic vinaigrette. It's so easy to make and bursting with fresh summer flavours! Recipe is gluten-free, vegetarian, and meant to be enjoyed as a side salad.
Make balsamic vinaigrette by adding all dressing ingredients together in a small bowl or in a jar with a lid. Whisk together or shake jar to combine well. Adjust salt + pepper to taste. Set aside.
Wash and pat nectarines dry. Slice each nectarine into 8 even pieces. Brush each side of each nectarine slice with a little bit of olive oil (this helps to prevent sticking to the grill).
Heat grill or grill pan to medium. Place the nectarine slices on the grill. Let the slices sit, undisturbed, for about 4 minutes or until grill marks start to form. Flip each slice and repeat for another 4 minutes on the other side. Turn off heat when done.
Plate salad with arugula, sliced tomatoes, and grilled nectarines.
Gently cut burrata into pieces and arrange on salad (or serve as a whole ball). Sprinkle chopped basil over top and add dressing. Toss to combine and serve!
Notes
*SERVINGS: This recipe is meant to be a side salad and will serve about 4 people.*MAKE AHEAD: This is not the best salad to make in advance or to keep leftovers of as it can get a bit soggy/watery. That said, you can certainly prepare the ingredients a few hours before you want to serve it.
Simply chop everything up, make the dressing, and store everything separately in airtight containers in the fridge.
You can grill the nectarines in advance or use freshly cut raw nectarines instead.
Throw everything together just before serving! I recommend adding the burrata right before serving, as it's quite a liquid/messy cheese :)

If you can't find nectarines, you can make this salad with fresh peaches instead!
Instead of using homemade balsamic dressing, you can use a store-bought balsamic vinaigrette or glaze.
Instead of arugula you could try another baby leafy green, like baby spinach, baby kale, or watercress. Other greens may be a bit overpowering!
Instead of heirloom tomatoes, you can use regular tomatoes. Try to find vine-ripened ones if possible (I find they have the most flavour ;))
If you don't feel like grilling the nectarines, you can totally make this just with fresh, raw nectarines. It'll come together super quickly!
