This delicata squash stuffed with quinoa and kale is a delicious vegetarian side dish. It's topped with goat cheese, pomegranate, and a simple red wine vinegar dressing!

Prep delicata squash & brush with olive oil. Bake in oven for 20 mins.
Make dressing. Stir into cooked quinoa and kale.
Add kale-quinoa mixture to squash & top with goat cheese. Bake for additional 7-10 mins.
Top with pomegranate & fresh thyme. Serve + enjoy!
