POTATO & GREEN BEAN SALAD

This simple potato and green bean salad recipe is paired with arugula, goat cheese, and a homemade maple dijon dressing. It’s both creamy and crunchy, and can be enjoyed either warm or cold!

INGREDIENTS

goat cheese

potatoes

garlic powder

dijon mustard

white wine vinegar

green beans

arugula

olive oil

maple syrup

STEP 1:

Boil potatoes for 15 minutes, then cut in half.

STEP 2:

Meanwhile, make maple dijon salad dressing.

STEP 3:

Blanch green beans, then transfer to an ice bath.

STEP 4:

Cut blanched green beans into smaller pieces.

STEP 5:

Add all ingredients to a bowl and toss in salad dressing.
