INGREDIENTS

tomato paste

curry powder

diced tomatoes

garlic

coconut oil

coconut milk

cumin

ginger

shallot

halibut

parsley

rice

STEP 1:

Heat coconut oil. Cook garlic, shallots + spices. Add coconut milk, diced tomatoes + tomato paste.

STEP 2:

Place halibut in curry. Cover + let poach for 10 minutes.

STEP 3:

Serve over rice or other grain. Garnish with parsley + enjoy!
