INGREDIENTS

golden beets

arugula

thyme

honey

walnuts

parmesan

dijon

quinoa

red wine vinegar

olive oil

garlic

STEP 1:

Clean beets and wrap in foil.

STEP 2:

Place foil-wrapped beets on baking sheet. Transfer to oven for 40 mins.

STEP 3:

Remove beets from oven + rub the beet skin off.

STEP 4:

Chop cooked beets into smaller pieces.

STEP 5:

Serve beets with arugula, cooked quinoa, walnuts, parmesan, and salad dressing.
