- 1 cup brown rice - 1 can coconut milk - 1 can corn - 1 cup water - fresh basil (to garnish) - salt - pepper
Add rice, water, 3/4 cup coconut milk, corn, salt + pepper to a pot.
Bring to a boil. Cover + simmer until liquid absorbs. Then, stir in remaining coconut milk for extra creaminess!
Garnish with chopped basil + serve alongside your favourite protein. Enjoy!
