These chocolate coconut date balls are such an easy, nutritious, make-ahead snack. Recipe is vegan, gluten-free, nut-free, and no-bake!
LET'S MAKE IT
desiccated (shredded) coconut
Add medjool dates, coconut, cacao powder, hemp seeds, and water to food processor.
Pulse until a paste-like texture forms.
Roll spoonfuls of mixture into balls. Then roll into extra coconut to coat. Transfer to the freezer!
Thaw for a couple minutes before eating. Keep leftovers in the fridge or freezer. Enjoy!
