I was craving pizza one day while at home, so I decided to do a little experiment with what I had in the kitchen. The experiment turned out SO RIGHT and that’s how these yummy pizza toasts were born.

These sourdough pizza toasts are made with healthy ingredients like tomatoes, mushrooms, bocconcini, marinara sauce, sourdough bread, and basil. They’re such a fun, delicious way to get your veggies in, and they’re as tasty as they look.

If you (or your kids) are ever craving pizza but don’t feel like takeout, be sure to give these a go!

These are so easy and fast to put together, and the toppings can totally be adjusted to your liking. I’ve included some yummy topping ideas below, but I’d love to know what you end up making them with. Enjoy!

Recipe Ingredients Needed

  • fresh sourdough bread
  • cremini mushrooms
  • cherry tomatoes
  • pizza sauce (I used marinara)
  • bocconcini cheese
  • olive oil
  • oregano
  • fresh basil

How To Make Pizza Toast

Homemade pizza toasts are the easiest thing ever!

Start by preheating your oven to broil and lining a baking sheet with parchment paper.

Then, slice sourdough bread and place on top of parchment paper.

Next, prep your ingredients by sautéing the mushrooms and tomatoes on the stovetop for about 5 minutes. Once that’s done, it’s time to assemble your toasts!

Spread pizza sauce (I used marinara) on the top of each slice. Then, place sliced bocconcini cheese and sautéed veggies over the pizza sauce.

Place the baking sheet under the broiler in the oven for about 2-5 minutes, or until the cheese has melted. Be sure to keep an eye on your toasts to make sure that nothing burns.

Remove the melty pizza toasts from the oven and sprinkle with a bit of oregano, fresh basil, and a drizzle of olive oil. And that is IT! Your delicious, cheesy pizza toasts are now ready to devour 🙂

Topping Ideas

There are SO many ways that you can customize this recipe! Just like regular pizza, the topping combinations are endless. Here are some ideas:

  1. other vegetables, like roasted red peppers or grilled zucchini (this would even be a great way to use up leftover cooked veggies!)
  2. other cheeses, like goat cheese, shredded cheddar, or gorgonzola
  3. pesto instead of (or in addition to) red pizza sauce
  4. pepperoni slices, if you enjoy meat

Ingredients

  • 4 slices of fresh sourdough bread
  • 2 tsp olive oil (+ more to finish)
  • 10 cherry tomatoes, halved
  • 1 + 1/4 cup cremini mushrooms, sliced (about 5 mushrooms)
  • 1/2 cup pizza sauce (like marinara)
  • 3 large or 8 small balls of bocconcini cheese, sliced
  • 1/4 tsp oregano
  • Fresh basil, to garnish
  • Salt + pepper, to taste

Instructions

  • Preheat oven to a broil.
  • Line a large baking sheet with parchment paper and place slices of sourdough bread on top.
  • Heat a small pan to medium and add olive oil. Sauté mushrooms and cherry tomatoes for 5 minutes (they do not need to be fully cooked). Remove from heat.
  • Spread pizza sauce on top of each slice of sourdough. Then, add slices of bocconcini, sautéed tomatoes, and mushrooms – divide ingredients evenly between 4 slices of bread.
  • Once your broiler is ready, place the baking sheet under the broiler for 2-5 minutes, or until cheese is fully melted. Be sure to keep an eye on your toasts to make sure that nothing burns!
  • Remove from oven, and top with oregano, fresh basil, salt, pepper, and an extra drizzle of olive oil. Enjoy immediately!

Notes

*Bocconcini cheese comes in different sizes. If you purchase the smaller balls, simply cut them in half. If you purchase the larger ones, cut each ball into 4 rounds.
*These pizza toasts should be enjoyed immediately while still hot. If you need to reheat them, place them in the oven for a couple minutes until the cheese melts again!
*MORE TOPPING IDEAS: There are SO many ways that you can customize this recipe! Just like regular pizza, the topping combinations are endless. Here are some ideas:
