These bite-sized stuffed mushrooms are filled with herby goat cheese and parmesan, then baked in the oven until browned, warm, and oh-so-delicious! Easy to make, even in advance, this is sure to be a crowd-pleasing party appetizer. Recipe is both vegetarian and gluten-free.

Each time I’ve tested the recipe for these cheesy stuffed mushrooms, my husband and I DEVOURED those bite-sized delights in mere minutes! While we may have treated them more as lunch during the testing process (lol), I guarantee that this simple appetizer recipe will be a hit at your next get together.

I mean, you simply can’t go wrong with warm cheesy goodness and that characteristic umami flavour of baked mushrooms! As a dietitian, I love how this tasty treat is a way to get in your veggies and other nutrition benefits, too 🙂

About the ingredients + substitutions

  1. Mushrooms: You will want to use 1 pound (16 ounces or 454 grams) of mushrooms for this recipe. The variety is important here – look for cremini mushrooms, mini bella mushrooms, baby bellas, or something along those lines! Ultimately, you are looking for smaller (2-bite) mushrooms with a distinctly round cap and a stem that pops out easily.
  2. Goat cheese: I used a regular (unflavoured) goat cheese log for this recipe. If you find goat cheese overpowering, you are welcome to cut the flavour by reducing the amount of goat cheese and using some cream cheese as well.
  3. Parmesan: I recommend freshly grated parmigiano-reggiano for the best flavour.
  4. Dried parsley: Along with dried thyme, dried parsley gets mixed into the cheese to create that delicious herby goat cheese flavour.
  5. Dried thyme
  6. Garlic powder: I prefer to use garlic powder rather than fresh garlic cloves here – the flavour is less overpowering and the powder is more evenly distributed in the cheese filling.
  7. Fresh parsley: While not necessary, this is an optional garnish to add a pop of colour when serving.

Visual guide: how to make stuffed mushrooms

STEP 1: To clean your mushroom caps, I recommend using a damp paper towel to rub off any dirt. Mushrooms are very porous and can get water-logged easily – we want to avoid overly watery mushrooms here!

STEP 2: After wiping down the mushrooms, gently pop out the stems from the caps.

STEP 3: Place all the mushroom caps on a baking sheet, spacing out evenly. Please note that you do NOT want to use parchment paper below the caps or else it will collect water when the mushrooms bake in the oven. I removed it after the photo (my mistake!!)

STEP 4: Next up – making the cheese mixture! Simply add goat cheese, grated parmesan, dried parsley, dried thyme, garlic powder, and black pepper to a small bowl.

STEP 5: Mix the stuffing ingredients together using the back of a spoon. It will take a minute until it all starts to combine.

STEP 6: The photo above is how you’ll want the cheese mixture to look when ready!

STEP 7: Using a knife, scoop the cheese mixture into the mushroom caps.

STEP 8: Repeat until all the caps are full! The mixture will be slightly raised out of the mushroom caps.

STEP 9: Pop those stuffed mushrooms in the oven for about 25-30 minutes, until the cheese puffs up and is lightly browned.

STEP 10: Serve them on a platter and garnish with fresh parsley (if desired). Gobble them up while they’re still warm!

Can you make these in advance?

Yes! You can prep the mushrooms, goat cheese mixture, AND stuff the mushrooms with the cheese filling a day or two in advance. Store them in an airtight container in the fridge.

Pop them in the oven just before serving – you’ll want to serve these warm.

Ingredients

  • 1 pound mushrooms (use cremini, mini bella, or baby bella varieties)
  • 1 cup goat cheese (roughly 8 ounces or 240 grams)
  • 1/4 cup parmesan, grated (recommend parmigiano-reggiano)
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Black pepper, to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  • Preheat oven to 350F. Remove goat cheese from the fridge so that it has some time to soften.
  • Wet a paper towel and ring out the excess water. Clean mushroom caps with the damp paper towel, gently rubbing off any dirt. Mushrooms get water-logged easily – we want to avoid overly watery mushrooms here!
  • Carefully pop the stems out of the mushroom caps.
  • Next, add goat cheese, grated parmesan, dried parsley, dried thyme, garlic powder, and black pepper to a bowl. Using the back of a spoon, mix the ingredients together until they combine well.
  • Using a knife, scoop the cheese mixture into the mushroom caps. Repeat until all the caps are full. The mixture will be slightly raised out of the mushroom caps.
  • Place all of the stuffed mushrooms on an unlined baking sheet, cheese side up and spaced out evenly. Pop the baking sheet in the oven for 25-30 minutes, until the cheese puffs up and is lightly browned.
  • Serve the stuffed mushrooms on a platter and garnish with fresh parsley (if desired). Gobble them up while they're still warm!

Notes

*SERVINGS: The amount of servings will depend on how hungry your guests are. I’ve estimated about 4 mushroom caps per person for party of 6. That said, you can easily serve this for less people – promise they will be devoured in minutes!!
